Mozzarella Moon Tarts

ADULT SUPERVISION NEEDED
- 500g puff pastry
- 125g mozzarella ball
- 1 small clove of garlic
- 30g basil leaves
- 30g pine nuts
- 40g grated parmesan
- 100ml olive oil
- Pinch of salt
- Preheat the oven to 200?C/Gas Mark 6 (180?C/Gas Mark 4 for fan ovens)
- Put a layer of Greaseproof paper on a baking tray and rub the butter on top ready for the Moon Tarts to go on.
- Remember to wash your hands and put on an apron!
Step 1: Mix together the garlic, basil and salt in a food processor (or using a pestle and mortar) until it becomes a smooth paste. Then add in the pine nuts and mix again.
Step 2: Gently stir in the parmesan and olive oil until it becomes a gloopy sauce.
Step 3: Roll out the puff pastry on a floured surface until it is about 5mm thick and cut out 6 large circles of pastry for your bases. Place these circles on your baking tray and leave to rest in the fridge for 10 minutes. Once they have set, prick them gently in the middle with a fork.
Step 4: Put about 1 tablespoon of your sauce into the middle of each pastry circle and spread it evenly around the pastry, leaving a 1cm border around the edge.
Step 5: Cut your mozzarella into 6 slices and place one slice on the top of your tarts (these are your moons!) Then put in the oven for 10-12 minutes until the pastry is golden.
